Sweet Summer Treats: Watermelon Sugar Cookies, Cupcakes & Popsicles

Watermelon Sugar Cookies

  • Ingredients:
    • 3 cups all-purpose flour
    • 1 ½ cups sugar

    • 2 eggs
    • 1 tsp vanilla extract
    • ½ tsp salt
    • 1 tsp baking powder
    • 1 lemon, zested
    • Triangle cookie cutter
    • Green food coloring
    • Small paintbrush
    • Red, white, black, and green royal icing
  • Instructions:
    1. Whisk together dry ingredients (flour, baking powder, salt).
    2. Cream butter and sugar until light and fluffy.
    3. Add eggs one at a time, then mix in lemon zest, juice, and vanilla extract.
    4. Gradually add dry ingredients to wet ingredients in two batches.
    5. Chill dough for 1 hour.
    6. Roll out dough and cut out watermelon shapes using a triangle cookie cutter.
    7. Bake at 350°F for 12-13 minutes.
    8. Decorate with red, white, and green royal icing to resemble watermelon slices.
    9. Use a black icing pen to add watermelon seeds and a green food coloring paintbrush to create stripes.

Watermelon Cupcakes

  • Ingredients:
    • 2 cups all-purpose flour
    • ¾ cup whole milk
    • 1 ½ cups sugar
    • ¼ cup shortening
    • 1 stick (4 oz) salted butter, softened
    • 5 egg whites
    • Watermelon Jell-O
    • Red food coloring
    • 2 tsp vanilla extract
    • ¼ tsp almond extract
    • 2 tsp baking powder
    • 1/8 tsp salt
    • ½ cup mini chocolate chips
    • Red silicone cupcake liners
    • Light and dark green vanilla buttercream frosting
  • Instructions:
    1. Whisk together dry ingredients (flour, baking powder, salt, Jell-O).
    2. Cream butter, sugar, and shortening until light and fluffy.
    3. Mix in extracts.
    4. Slowly add egg whites while mixing.
    5. Alternate adding dry ingredients and milk to wet ingredients.
    6. Add red food coloring to desired shade.
    7. Fold in mini chocolate chips.
    8. Bake at 350°F for 18-20 minutes.
    9. Cool cupcakes completely before frosting.
    10. Pipe a swirl of light and dark green frosting onto each cupcake.

Watermelon Popsicles

  • Ingredients:
    • Popsicle maker
    • 1 cup watermelon puree
    • ½ cup plain coconut milk
    • ½ cup green coconut milk
    • Black food coloring
    • Small paintbrush
  • Instructions:
    1. Blend watermelon to create puree.
    2. Pour watermelon puree into popsicle mold, leaving room at the top.
    3. Freeze until set, then add white coconut milk layer.
    4. Freeze again, then add green coconut milk layer.
    5. Freeze completely.
    6. Use a paintbrush dipped in black food coloring to add watermelon seeds.
